Damsing

High in the Cordillera above Sagada, the barangay of Damsing has grown coffee among mixed food gardens since the late nineteenth century. Lourdes Aligo farms without synthetic fertilisers or pesticides, continuing an approach to intercropping that generations of her family have practised before her. The altitude and long dry season give these beans their natural sweetness.

A process passed down

Cherries are hand-picked at peak ripeness and dried whole on raised beds, moved out of the afternoon sun to keep the drying even and slow. It is the same patient process Lourdes learned from those before her, now carried on with her children. Roasted medium, it draws out bright citrus and dark chocolate, with soft floral notes underneath.
