Named after the peak

In Barangay Balutakay, on the same slopes his neighbours farm, JL Dela Cerna tends his coffee at 1,650 metres on Mount Apo's shoulder. The lot is named for Apo Sandawa, the guardian spirit local legend holds within the mountain — a single farm, not a blend, and a mark of respect rather than a marketing flourish.

A fuller, darker cup

Cherries are sealed and left to ferment before drying whole on raised beds, an anaerobic natural process taken further than a standard dry method. The result is a fuller, darker cup — orange and cherry up front, chocolate and nuts underneath. We roast it medium so the chocolate doesn't take over.
