Cerrado Mineiro

Cerrado Mineiro sits on a high, rolling plateau in northwest Minas Gerais, the first coffee region in Brazil to earn a protected designation of origin. The dry season is long and dependable, which lets the Andrade family dry whole cherries on open patios with little risk of spoiling.

Dried on open patios

The cherries dry slowly and evenly under the plateau sun, turned by hand through the day to keep the fermentation even. It is unhurried, low-risk work that suits the reliable dry season here. Roasted light, the cup carries milk chocolate and roasted almonds, with caramel underneath.
